It feels like I’m in a little bit of a rut when it comes to making simple, healthy lunches for me and my boys at home. My current go-to ingredient: Rosarita’s Green Chili & Lime Refried Beans.
Slap a spoonful onto a whole wheat or corn tortilla; throw a handful of cheese on top; fold tortilla in half; grill in the sandwich maker (or nuke in the microwave if you’re really feeling lazy). Drown in salsa. Add a dab of low-fat sour cream. Ta-dah! Delicious.
