I’ve been meaning to share my recipe for candied pecans. I think nuts are generally considered a fall food, but my favorite way to eat these pecans is in a fresh salad which sounds absolutely wonderful as we’re enjoying our brief Spring here in Phoenix. I know the heat is just around the corner and THAT is when I’ll serve these up on top of ice cream. No matter what, a batch of candied pecans never lasts long here at our house. Good (or bad) thing they’re so easy to make!

INGREDIENTS:
3 cups pecans
1 cup sugar
4 tablespoons butter (do not substitute margarine)
2-3 tsp vanilla
¼ tsp nutmeg
¼ tsp cinnamon
Dash of salt & pepper

INSTRUCTIONS: In a large pan melt butter and sugar together over medium heat. If you want your nuts chopped, now is a good time to do so. Once sugar has started to melt, mix in nuts. Stir continuously for about 30 seconds. Add the vanilla, a teaspoon at a time, stirring between each. Sprinkle in spices, salt and pepper. Turn heat down to low and continue to stir nuts for another 2-3 minutes. Turn heat off and let nuts cool, stirring occasionally to keep them from sticking to the pan.

  1. I tried doing this candied pecan recipe. My sugar mixture turned clumpy and did not stick to my nuts. Any idea what I did wrong. Only thing I can think of is I added the nuts too soon? Is the butter sugar mixture supposed to become a liquid or stay solid?

    • The butter and sugar are supposed to melt first, becoming a liquid. If you add the nuts in too soon place a top on your pot and add a little bit of extra butter, this will aid the sugar in melting.

  2. This recipe did not work. Not enough butter. Your reply above should have been a note in the recipe about adding a little more butter and using a lid.
