Yummy Peppermint Crackle

Yesterday Bettijo posted her favorite Christmas treat, so we thought it would be fun for me to post mine today. My most favorite food is chips and salsa (and in my opinion that tops any treat I’ve ever had), but that didn’t seem quite appropriate to blog about just a few days before Christmas. So, I thought I’d share my favorite sugary treat of the moment—peppermint crackle.

This stuff is delicious and quite addicting. (I may or may not have had to squeeze in an extra trip to the gym over the weekend for consuming WAY. TOO. MUCH. of this.) I’ve found most people top it with shredded coconut or sliced almonds, yet I love topping it with crushed peppermint. Yum! Anyway, enough babbling, onto the recipe:

Peppermint Crackle Recipe:
:: 1-2 sleeves saltine crackers
:: 1 cup butter
:: 1 cup packed brown sugar
:: 2 cups semi-sweet chocolate chips
:: 3 full size candy canes
:: Sea salt (if using unsalted saltine crackers)

Step1

Preheat oven to 350. Cover a rimmed baking sheet with foil. Line the saltines side by side until the baking sheet is covered. (My boys love to do this part for me.)

In a medium saucepan, bring the butter and brown sugar to a boil while stirring. Continue stirring and boiling the caramel for 3 minutes. Immediately pour over the crackers to cover them. Use a knife or spatula, if necessary, to make sure each saltine is covered. Bake for 10 minutes.

Meanwhile, crush your candy canes. My boys like to unwrap the candy and eat any slivers that fall off in the process. I’ve found crushing the canes in our food processor takes just seconds and leaves no mess!

Step2

After the caramel and crackers have baked, remove from the oven and immediately sprinkle with chocolate chips. When soft (about 3-5 minutes), use a knife to spread the chocolate evenly across the caramel. Immediately top with crushed peppermint and a pinch of sea salt, if desired. Let cool.

Step3

Once cooled, cut into small pieces and taste test! Yummy, right? If you’re kind enough to share, package your crackle up and deliver!

  1. I love this stuff so I will have to try the peppermint!!! i love salty so i actually add pretzel bits to mine!! hehe your looks more festive and will do this weekend!!

  2. Yes ( pretzel sticks squished up! Didn’t want u looking for an actual product there!!!) I also add some white chocolate for good measure! And I felt the same way with ur idea…. Not that I couldn’t find a reason not to make this!!!

  3. I’m trying out this recipe tonight for the first time, I can’t wait to taste it. I’m wondering how long it will keep and what is the best way to store it.

    • We store ours in an air-tight container. As for how long it lasts, I’m not sure–we never have any left after a day or two! Good luck, and let us know how it turns out!!

  4. This sounds DELIGHTFUL!! I can’t wait to try it out. Unfortunately my holiday baking and dipping got put on the back burner this year, but maybe for New Years!!
