Wednesday we showed you the Oh Boy! Brunch my friend Ashley and I hosted together. A few recipes stood out as party favorites, so we thought we would share them with you here.
Both recipes come from Ashley — so she’ll take it from here:
Spinach Herbed Quiche
Ingredients
:: 1/2 cup butter
:: 3 cloves garlic, chopped
:: 1 small onion, chopped
:: 1 10 ounce package frozen chopped spinach, thawed and drained
:: 1 4.5 ounce can mushrooms, drained
:: 1 6 ounce package Mediterranean flavored feta, crumbled
:: 1 8 ounce package shredded Cheddar cheese
:: 1 9 inch unbaked deep dish pie crust
:: 4 eggs, beaten
:: 1 cup half & half
:: Salt and pepper to taste
Directions
Preheat oven to 375 degrees. Bake empty pie crust for about 5-10 minutes.
Meanwhile, in a skillet, melt butter over medium heat; saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and about half the Cheddar cheese. Season with salt and pepper.
In a medium bowl, whisk together eggs and half & half. Season with salt and pepper. Thoroughly combine egg mixture with spinach mixture. Pour into preheated crust.
Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.
A Few Notes::
This recipe was adapted from here. When we made this for the shower, we doubled the recipe and found we had too much of the spinach/egg mixture to fit into our pie crusts. It made fabulous scrambled eggs the next day!

This recipe comes from my own Mom, Nancy. She would make this for our family when I was growing up, and it always brought compliments. This dip is so simple — you probably have the ingredients on hand.
Nancy’s Fruit Dip
Ingredients
1/3 cup sour cream (or plain yogurt)
8 oz cream cheese, softened
1/4 cup + 1 Tbsp brown sugar, packed (or to taste)
1/4 tsp cinnamon
1 tsp vanilla
Directions
Combine all ingredients using mixer or food processor. Chill at least 1 hour.
Since Shanna, our Mama-to-be was craving raspberries at the time, we served this atop a combination of berries served in individual parfait dishes. For garnish, we added a sprinkling of sliced almonds.
A couple notes::
Regular or reduced fat cream cheese works well in the recipe, yet fat free cream cheese is not recommended. This can be served as a dip or as a flavorful dollop to garnish a serving of fruit.
